These flours have been created in remembrance of our grandfather Urbano, who handed down to us his passion and his dedication to his work. Thanks to our hard work and our studies, we have been able to create and produce these rich in fibre flours which bring back to the palate a bygone taste, made of strong emotions and memories. A dive into the past, when the wheat was cultivated by the farmer, then it was ground in the stone mills and finally the flour was kneaded and baked at home. A past in which the concept of 'family' became 'community' and the meaning of 'time' was the 'waiting time' necessary for leavening.

The smell of the freshly baked bread spread in the house and it was an inviting scent for everyone, for both young and old, who joyfully gathered around the table, in a moment of communion and sharing.

This is what we would like to convey through our URBANO line flours: our Love for the fields, the Taste of life’s simple things and the passion of many artisans who everyday create genuine and unique Products.

TYPE ‘1’ BASE

Flour made from the best white Italian wheats. It is ideal for those who are looking for more taste and more fibre without changing the product appearance when compared to the typical white flours.

RECOMMENDED FOR:

BREAD

characterized by fermentations with natural leavening processes

PIZZA

with a dough characterized by medium rising times

PASTRY

in order to prepare products characterized by medium rising times and by a more intense taste. For example: maritozzi (typical Italian sweet buns), bundt cake and tart

TYPE ‘1’ FORTE

Flour obtained from the best Italian high-protein wheats. Ideal for medium and long fermentations.
During the fermentation processes, this flour can easily express its full potential without causing particular problems thanks to its right amount of fibre.

for doughs characterized by long rising times

PASTRY

for products obtained by long rising times characterized by a typical intense taste

TYPE ‘2’ BASE

Flour produced with the best wheat varieties coming from both Emilia-Romagna and Le Marche regions.
During the milling process we select the inner fibre of the wheat grain since they develop pleasant aromatic components.

TYPE ‘2’ FORTE

Flour obtained from the blend of the best high-protein wheats from our Le Marche region.
This flour has a unique identity since it derives from a specific milling process in which the inner fibre of the wheat grain have been intentionally chosen because of their intense aroma and flavor.
