Autumn 2025 marks an important milestone in the journey of Molino Paolo Mariani: the birth of Gustodi della Bontà, the first artisanal panettone made with 100% Italian ingredients, born from a shared vision with Andrea Sortino, one of the leading masters of contemporary natural leavening.
A limited-edition project that expresses, without compromise, the philosophy of the active supply chain: a short, traceable, and conscious supply chain in which every ingredient has a clear origin, a face, and a territory to tell.
Gustodi della Bontà: A Name, Two Souls
The name Gustodi della Bontà comes from a play on words combining gusto (taste) and custodi (guardians), encapsulating the essence of the project: to guard taste, protect its identity, and enhance its origin.
It’s not just a delicious panettone, but a product that carries a sense of responsibility selecting, processing, and celebrating genuine Italian ingredients, the fruit of skilled hands and transparent supply chains.
For us, being “gustodi” means making a daily choice to stand on the side of authenticity.
A Panettone That Begins with the Grain
At the heart of the recipe lies Monocultivar Omega flour a high-strength flour obtained from a single variety of soft wheat grown exclusively in the Marche region. Developed and tested in Molino Paolo Mariani’s experimental fields for over three years, it was created to ensure stability in leavening, consistent structure, and clean aromas.
This is the raw material from which Sortino built his dough, enhancing its technical and sensory properties to the fullest.
A 100% Italian Supply Chain, Without Compromise
Beyond the Omega flour, every single ingredient is strictly Italian, carefully selected to guarantee authenticity and quality in every bite. Each one reflects attention to the land and represents some of the finest artisanal excellences of Italy:
- Fresh eggs – supplied by Antiche Fattorie Marchigiane, committed to supporting local poultry farming.
- Honey – from Fattoria Cuore Capanna, an organic farm in the Marche managing the entire beekeeping and agricultural process.
- Butter – crafted by Giovale Formaggi, master cheesemakers from Piedmont who unite sustainability and tradition.
- Raisins – selected by Uvella, a Sicilian company specializing in natural drying and processing of local grapes.
- Candied fruit – from Ital Canditi, a benchmark in high-quality candied fruit production.
- Sugar – by Italia Zuccheri, promoting a 100% Italian and transparent supply chain.

The Packaging: A Map of Taste
The packaging, designed by Premiata Fonderia Creativa a creative agency rooted in the Marche region is inspired by the concept of “The Journey”.
It narrates the discovery of authentic places where Italy’s finest traditions are born: like the white country roads winding through fields of wheat, symbolizing the deep bond between the land, craftsmanship, and Italian beauty.
