Two distinct gastronomic cultures, yet deeply connected by their respect for raw ingredients, craftsmanship, and the desire to create value through food.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">A theme that perfectly reflects the philosophy of our artisan mill: building an active wheat supply chain capable of connecting agriculture, research, processing, and food culture.<\/p>\n\n\n\n<h2 class=\"wp-block-heading\">A Breakfast That Tells Stories<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">Guests were welcomed with a breakfast that already embodied the spirit of 360 Grani.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">From Madrid came Alberto Miragoli, co-founder of Cientotreinta\u00ba Pan y Caf\u00e9, one of the most exciting names in Spain\u2019s new baking movement. For the occasion, he prepared the traditional <strong>Rosc\u00f3n de Reyes<\/strong>, an iconic symbol of Iberian gastronomic culture.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Accompanying it was a selection of specialty coffees curated by Simone Falabella, who guided guests through the tasting of a washed Kenyan coffee characterized by elegant notes of honey, cocoa, marzipan, and orange. A story of transformation and research that led him from the worlds of professional sports and finance to artisan pastry making. Together with his wife Allegra, he has built a project that is widely recognized and appreciated throughout the Marche region.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">His creations reveal a strong connection to the local territory, a cornerstone of his production philosophy. The enhancement of local excellence, collaboration with producers from Marche, and the desire to tell the story of the region through flavors, ingredients, and traditions are among the foundations of the Pozzo Blend project. The recipe was developed specifically for 360 Grani using ingredients that represent both our territory and our supply chain: einkorn wheat, cracked wheat, extra virgin olive oil, Avacelli hazelnuts, class=\"wp-block-paragraph\">The featured guest was Cristian Marcellini with his \u201cLab Evolution\u201d format, attended by numerous professionals from various regions of Italy.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">At the center of the session was a hybrid croissant made with our OMEGA and ZETA monocultivars, which served as a starting point for exploring varietal research and its Begins<\/h2>\n\n\n\n<p class=\"wp-block-paragraph\">As every year, the heart of 360 Grani was the walk through our experimental fields.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Twenty-two hectares dedicated to varietal research, where our active wheat supply chain takes shape and where each season we study how different varieties perform in our territory.<\/p>\n\n\n\n<figure class=\"wp-block-paragraph\">Following the field visit, the day continued in the Bakery area.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Here, Alberto Miragoli presented his \u201cBread from Madrid to Barbara,\u201d a creation that represented the meeting point between Spanish bread culture and our local territory.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">The bread was served with tomato and anchovies from San Benedetto, achieving a perfect balance of simplicity, gastronomic identity, and ingredient quality.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default fire.<\/p>\n\n\n\n<p class=\"wp-block-paragraph\">Gabriele Milani, chef of Bera Restaurant in Barcelona and founder of Algrano Bistro, brought his interpretation of signature fresh pasta, creating an ideal bridge between Italian tradition and the experience he has gained in international fine dining.<\/p>\n\n\n\n<figure class=\"wp-block-gallery has-nested-images columns-default is-cropped
